Chili Recipes for the Primo Grill

We're in the midst of the Autumn season and football weekends. These both call for an awesome chili recipe. You can bring this dish with you to a party, or this can be the main course of your own gathering. Either way, we've got you covered. Here are the perfect chili recipes to try on our Primo Grills.



 


GRILLED CHILI



Ingredients

  • 2lbs lean beef, trimmed of fat and cut into 1-inch cubes

  • 1⁄4 cup chili powder

  • 1 tbsp ground chipotle chile pepper

  • 2 anaheim chilis

  • 2 jalapeno peppers

  • 2 tbsp olive oil

  • 1 large onion, chopped

  • 2 large garlic cloves, minced

  • 1 (15 oz) can pinto beans, drained

  • 1 (15 oz) can kidney beans, drained

  • 1 (15 oz) can navy beans, drained

  • 2 (14.5 oz) cans diced tomatoes, not drained

  • 2 (14.5 oz) cans tomato sauce

  • shredded cheese

  • sour cream



Directions

1. Prepare grill

2. Combine chili powder, chipotle powder, and beef cubes into zip-lock bag. Shake.

3. Thread beef cubes and peppers onto separate skewers.

4. Grill beef 10 min.

5. Grill peppers 15-20 min.

6. Remove beef cubes from skewers.

7. Remove peppers from skewers, wrap in damp paper towel, let cool.

8. Peel skin from peppers, seed, and dice.

9. Use saucepot to heat oil and aute onions and garlic.

10. Add beef, peppers, beans, tomatoes with juice, and tomato sauce to pot. Let simmer 20-30 min.

11. Garnish.

DUTCH OVEN CHILI




Ingredients

  • 3 lb round steak, chopped

  • 1 onion, finely chopped

  • 4 (15 oz) cans Bushes Chili Beans

  • 2 (15 oz) cans diced tomatoes

  • 2 small cans tomato paste

  • 1 bag Williams Chili Seasoning

  • 2 cloves garlic, finely chopped

  • 2 jalapenos, chopped

  • garlic powder

  • New Mexico Red Chili powder

  • 5 qt dutch oven



Directions

1. Start with a 5qt cast iron Dutch oven setting on the grill in your grill dome.

2. Grill temperature should be 275.

3. Brown steak with chopped onion before adding to dutch oven

4. Add chili beans, diced tomatoes, tomato paste, chili seasoning, garlic cloves, jalapenos, and garlic powder to dutch oven.

5. Boil without lid, cut temperature back, let simmer for 1-2 hours. (Make sure to stir every so often.)

6. Add chili powder and stir.

BEER CAN WHITE CHICKEN CHILI





Ingredients

  • 1 whole chicken

  • 1 can beer

  • 4 cans Great Northern beans

  • 2 whole white onions (chopped)

  • 8 oz. white mushrooms (sliced)

  • 4 cloves garlic (minced)

  • 2 tsp cumin

  • 2 tsp oregano

  • 1 tsp smoked paprika

  • 0.5 tsp cayenne

  • 4 cups chicken broth

  • 16 oz. green chilis (diced)

  • 2 cups sour cream

  • 16 oz. heavy cream

  • 7 qt dutch oven



Directions

  1. Set the grill to indirect cooking and heat to 350°F.

  2. Fill dutch oven with beer.

  3. Place chicken on top of beer and put in grill.

  4. Grill until the chicken is 160°F.

  5. Remove chicken and let sit uncovered for 45 minutes.

  6. Shred chicken.

  7. Set the grill temperature to 325°F.

  8. Add chicken broth, sour cream, onions, mushrooms, garlic, cumin, oregano, paprika, cayenne, and chilis to dutch oven and mix thoroughly.

  9. Drain beans.

  10. Add beans to the dutch oven along with the shredded chicken. Mix thoroughly.

  11. Put dutch oven in grill uncovered (still indirect and at 300-325°F).

  12. Wait 30 minutes to add smoky flavor to the chili, cover.

  13. Let simmer 90 minutes. Stir occasionally.
